To answer the question more directly, I feel like 2d and 3d fighting games are just different. For the most part 2d games are faster paced and are more about frame rates. They are also better for quick pick up games for casual players. Though they do have deeper mechanics and skilled players can do really impressive things.
There's just so much more than can be done with it now, and graphics have improved enough to where polygons are no longer eclipsed by sprites, although I think it depends on the genre.
